I love me a good cupcake, so I thought I would share my fave for the theme of this challenge, Fall/Autumn. Ready to know what that is? Okay, it's pumpkin. I love pumpkin cupckaes with the cream cheese frosting.
Here is the recipe:
2 1/4 c. white flour
1 c. wheat flour
1 tbs. baking powder
1 tsp. baking soda
2 1/2 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. salt
1 1/2 c. pumpkin
1/2 c. unsweetened applesauce
1/2 c. canola oil
1 1/2 c. sugar (I only use 1 cup)
3 lg. egg whites
2 tsp. vanilla extract
Combine wheat and white flour, baking soda, baking powder, cinnamon, nutmeg, salt, set aside.
Combine pumpkin and applesauce, set aside.
Cream together canola oil and sugar until well blended. Beat in egg whites and vanilla extract.
Gradually stir in flour and pumpkin mixtures. Spoon into muffin tins, bake at 350 for 23-25 minutes.
Frosting:
4 oz. cream cheese
1 3/4 c. powdered sugar
1/2 tsp. vanilla extract
Mix well until frosting consistency.

Oh my gosh I LOVE pumpkin! Why haven't I ever thought of pumpkin cupcakes? Brilliant! Now, what about pumpkin chocolate chip cupcakes? eh? eh?

Suzi thank you for the recipe I made the ones from the apron goddesses and I added chocolate chips. My family loved them. They think I'm a super cook now. I can't wait for other recipes.
